Paprika crusted chicken

This dish wasn’t anything impressive, but I thought it was very tasty. I just took chicken breasts and soaked them in Half n’ Half for about an hour. This seemed to give them a little more adhesive quality. Then I liberally rubbed them with paprika, salt, and black pepper. After that I breaded each breast with Italian seasoned bread crumbs. Broiled these on a wire cooling rack on lipped cookie sheet. It will probably take about 8 minutes a side, or until the bread crumbs are sufficiently crispy.
I’m not sure what I should call the side dish. I took some potatoes and baked them most of the way in microwave. While those were cooking, I heated some olive oil in a pan with some dried thyme and Italian spices. I put the spices in the pan instead of on potatoes so that they had a chance to hydrate and season the oil. After the potatoes were done in the microwave, I cut them into small wedges and browned them slightly in the pan. After that, they just need a little extra salt before serving.
As I said, nothing mind-blowing going on here… but it was quick and flavorful.

Looks good, and it sounds a lot better than anything they serve on campus.
